Pasta Amatriciana

Pasta Amatriciana
This dish will feed 4 people for less than €2 each using ingredients from Lidl.


Ingredients:

1 packet of dried spaghetti, fusili, tagliatelle (whichever you prefer.)

1x500g carton of passata/sieved tomatoes 

1 can chopped tomatoes 

1 small red onion finely cubed 

2-3 bird's eye green chillies finely chopped 

1 packet of bacon lardons/cubetti di pancetta 

1 teaspoon soft brown sugar 

2 tablespoons red wine 

1 teaspoon olive oil 

2 cloves garlic finely chopped

2 hanfuls of grated parmesan cheese (optional)


Preparation

1- Fry the bacon cubes in the olive oil over a medium to high heat until crispy.
 
    


Freezing tip Make larger batches and freeze in portion sizes.This keeps the cooking time the same but covers more meals which is cheaper.

Substitution If you don't have red wine, deglaze the pan with a small dash of balsamic vinegar.

If your sauce has evaporated a lot and it is sticking, just add a little water and stir it in.
