Well, not exactly... but it does have cabbage, spuds and bacon in it!
|Chunky Minestrone Soup|
1 packet good quality back bacon
1/2 a small turnip
1/2 a small cabbage
3 large carrots
6 large potatoes
2 medium onions
2 cloves garlic
1 chicken stock cube/pot
3 handfuls small pasta shapes
1 carton passata
1 tin chopped tomatoes
1 teaspoon brown sugar
salt & pepper
kettle of boiling water
2- Chop the carrots, turnip and potatoes into large chunks.
3- Shred the cabbage.
4- Finely slice the garlic and onions.
5- Trim the fat off the bacon and finely slice.
6- Grab a large pot and put it on full heat.
7- Fry off the bacon until brown, then add the onions and sugar and turn down slightly. Fry until soft. Season with pepper.
8- Add the carrots and fry for a few minutes.
9- Add the garlic and turnip, frying for another few minutes.
10- Add the cabbage and fry for another few minutes.
11- Add the passata, tomatoes and 2 lites of boiling water.
12- Add the stock pot and the potatoes.
13- Bring to the boil and simmer for about 30 minutes.
14- Test the soup to see if you would like to add salt. I usually don't as the bacon and stock cube are salty enough.
15- Add the pasta. You can use spaghetti, shells or whatever. Don't add too much as they will swell up a lot.
16- Once the vegetables are soft, the soup is done.
17- Serve with crusty bread or try my Cheese and Tomato Foccacia recipe.
Hints & Tips:
All of these ingredients can be purchased very cheaply in almost any shop throughout the country making this a great meal for those on a budget or for those with a large family to feed. This soup is healthy and nutritious with little fat or sugar.
I always add a teaspoon of sugar to any dish with tomatoes as it helps to bring out their flavour.
This soup does not freeze well as it contains potatoes. However, it will keep in the fridge for a few days. Just make sure it is completely cooled before storing it in the fridge.
